I usually serve these as an appetizer, over a plate of spaghetti or eat them in a sandwich. Ingredients

1 bag of frozen artichoke hearts (12 oz.), thawed and mashed
2 cloves garlic, minced
2 tbsp. light mayonnaise
1/3 cup grated parmesan cheese
½ cup seasoned bread crumbs, plus additional for crust
Juice from half a lemon
Salt and pepper
Cooking oil spray
Directions
Grease small pan with cooking spray and place over medium heat. Sauté garlic and artichokes for 5 minutes, stirring.
Remove from heat and put into a bowl. Add cheese, crumbs, mayonnaise, lemon juice, salt and pepper. Roll into balls – 1 tsp. each. Roll in additional crumbs and place on a greased cookie sheet.
Bake in 350º oven 20-30 minutes. Flip half way through cooking.
Serving is 4 balls
