Beans and Greens

Ingredients

    1 (15 oz) can white beans
    15 grape tomatoes, seeded and chopped
    1 large clove garlic, minced
    1 tablespoon olive oil
    Red pepper flakes
    1/2 head savoy cabbage, shredded
    1/2 cup vegetable broth
    Apple cider vinegar

Directions

Heat 1 tablespoon olive oil in small pot. Add minced garlic and a dash of red pepper flakes and saute until softened. Add rinsed, drained white beans, chopped grape tomatoes, cover pot with lid, and simmer on LOW.
While the beans simmer, shred the cabbage. Heat the vegetable broth and a dash of apple cider vinegar in a large pan on HIGH. Add the shredded cabbage and cook until wilted.
Place cabbage in a large bowl, top with bean mixture, and serve.
