Pork & Beef Meatloaf with Vegetables

Introduction

Ingredients

    1 lbs lean ground beef
    1 lbs medium ground pork
    2 eggs
    1 cup milk
    1 cup oatmeal
    1 large onion, chopped
    1 cup celery, chopped
    1 cup bell peppers, chopped
    1 cup fresh mushrooms, chopped
    4 garlic cloves, minced or 4 Tbsp ready to use garlic
    1 - 5.5 oz can tomato paste
    2 Tbsp seasonings
    1 can cream of mushroom soup
    1 can tomato soup

Directions

1. Mix all ingredients, except soup, in a large bowl.
2. Divide over 2 loaf pans or 6 mini loaf pans.
3. Cover with soup, 1 can does 1 meatloaf.
4. Bake in 350 F oven for about 1 1/2 hour. Mini loafs are done faster.

Makes 12 servings.
