Zucchini Nut Muffins

Ingredients

Egg, fresh, 3 large
Olive Oil, 1/4 cup
Applesauce, unsweetened, 3/4 cup
Granulated Sugar, 3/4 cup
Brown Sugar, 1/3 cup, unpacked
Zucchini, 2 cups, grated
Flour, white, 2 cups
Whole Wheat Flour, 1 cup
Baking Soda, 1 tsp
Baking Powder, 1/4 tsp
Cinnamon, ground, 3 tsp
Salt, 1 tsp
Walnuts, 1/4 cup, chopped
Directions
Beat eggs until they are light and foamy. Add sugar, oil, and zucchini. Blend well with spoon. Mix the dry ingredients and add to the egg mixture. Blend well. Add nuts. Spoon into greased muffin tins. Bake at 325 for 20 minutes.
