Rustic Potato Patties

Ingredients

    Vegetable Oil Spray
    4 Cups water
    1 pound red potatoes, diced (3 medium)
    1/2 cup minced onion
    1/4 cup plus 2 Tablespoons fat-free evaporated milk
    White of 1 large egg
    1/2 teaspoon salt
    1/8 teaspoon black pepper
    1/8 teaspoon cayenne pepper
    1/4 cup all-purpose flour
    1 Tablespoon acceptable vegetable oil, divided use

Directions

Preheat oven to warm or 140 F. Spray a large non-stick skillet with vegetable oil spray. Set aside.

In a medium sauce pan, bring water to a boil over high heat. Add potatoes and return to a boil. Reduce heat and simmer, uncovered, for 7 to 8 minutes, or until tender but not mushy. Drain well. Return potatoes to pan or put in large bowl; beat until no lumps remain.

Add onion, milk, egg white, salt, black pepper, and cayenne and beat until well blended.

Beat in flour.

Pour 1 1/2 teaspoons oil into skillet; swirl to coat bottom. Heat over medium-high heat for about 2 minutes, or until hot. Spoon 4 rounded 1/3-cup mounds of potato mixture into skillet. Using back of a fork, flatten slightly until about 1/2 inch thick. Cook for 5 minutes on each side. Put patties on an ovenproof platter and set in oven. Repeat process, heating oil over medium-high heat for 30 seconds.

1 serving is 2 patties per person.
