Introductiona chicken chile enchilada casserole. a chicken chile enchilada casserole.
4 tbsp canola oil
1 onion, chopped
6 cloves garlic
1 red pepper, chopped
16 oz chopped green chiles
3 cans (12.5oz ea.) canned chicken
3/4 cup flour
6 cups chicken broth
20ish corn tortillas (6")
3-4 cups shredded mexican blend cheese
While you do this, preheat the oven to 350F and brown the tortillas in a nonstick pan.
Layer the ingredients like you would a lasagna - start with a thin layer of sauce at the bottom, add the tortillas and a layer of cheese, and repeat.
While this recipe makes 12 hearty servings, I made the full batch of sauce and only assembled half of it for dinner and froze the rest of the sauce for use later. My kids loved it!
