Ingredients

    2 oz butter, softened
    2 oz unsweetened applesauce
    1/4 cup brown sugar
    1/4 cup brown sugar
    1/4 cup egg substitute
    1 t. vanilla
    1 cup cooked, mashed yam
    1 1/4 cup flour
    1/8 cup ground flax seed
    1 1/2 t. baking soda AND baking powder
    1/2 t. salt
    3/4 t. pumpkin pie spice
    1/2 cup chopped pecans

Directions

Preheat oven to 400 degrees. Cream butter and applesauce. Add egg substitute and mix well. Add sugars and beat until smooth. Add vanilla and mashed yam.
Mix together the dry ingredients. Add to the creamed mixture, and blend well. Drop by teaspoon on greased cookie sheet and bake 8-10 min. Cool on rack.
