Low Fat Grape-Nut Pudding

Introduction

My sister Roxi gave me this recipe. It is a wonderful dessert for those following a low fat diet. If on weight watchers it is only 3pts per serving. If you like custard like desserts, you won't be sorry you tried this one. It is lite and full of protein and flavor. My sister Roxi gave me this recipe. Number of Servings: 6

Ingredients

    4 cups Skim Milk
    16 oz Egg Beaters
    1/2 cup Grape-Nuts Cereal
    1/2 cup Splenda
    2 tsp Vanilla extract
    1/2 tsp Cinnamon
    1/4 tsp Nutmeg

Directions

Place a water bath larger than casserole dish in 350 degree oven in preperation for baking pudding.
Scald milk in 2 qt pot at med-high temp.
In small bowl mix together egg beaters, splenda, vanilla and cinnamon.
Once milk is scalded skim film off top of milk, remove pot from stove and add cereal. Let milk mixture set for 5 min.
After 5 min. gradually add milk to egg mixture very slowly so you don't accidently cook egg with hot milk.
Stir to blend all. Pour into a buttered casserole dish and place in water bath. Sprinkle with nutmeg and bake 45 min. Test with clean knife. When knife inserted comes out clean pudding is done. It could take up to 1 hour depending on oven. Makes 6 1-cup servings
