These waffles are delicious and light. Serve them with warm maple syrup or fresh berries if you like. I like to top them with low-fat yogurt and a few fresh berries. Number of Servings: 4

Ingredients

    1 c. Fiber One cereal, finely crushed
    1 1/4 c. nonfat milk
    1 egg, slightly beaten
    2 T. canola oil
    1 tsp. vanilla
    3/4 c. whole wheat flour
    3 pkts. Splenda sweetener
    1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp salt
    Dash of cinnamon
    Dash of nutmeg

Directions

Spray waffle maker with cooking spray if needed. Heat waffle maker. Place cereal and milk in a bowl and let stand for 5 minutes. Stir in egg, oil and vanilla. Stir in remaining ingredients just until moistened and smooth. The batter will be thick.

Spread batter onto center of hot waffle maker. Close lid and bake for about 5 minutes or until steaming stops and waffles are golden brown. Remove waffle and repeat with remaining batter. Serve immediately.
