Creamy Ham Casserole

Introduction

Ingredients

    3 tablespoons butter or margarine
    1/2 cup celery sliced
    1/2 cup onions finely chopped
    1/4 cup nonfat milk
    1 8-ounce lowfat package cream cheese cubed and softened
    2 tablespoons pimiento diced
    2 tablespoons parsley minced fresh
    1 tablespoon horseradish, prepared
    Salt and freshly ground pepper to taste
    1 cup lean ham cubed, cooked
    1 cup mixed vegetables, cooked
    2 cups macaroni, cooked (or other leftover pasta)
    2 tablespoons parmesan cheese grated
    2 tablespoons crackers crumbs (Ritz)

Directions

Heat oven to 350° F.

In large skillet, heat 2 tablespoons butter or margarine and sauté celery and onion for 3 minutes. Stir in milk, cream cheese, pimiento, parsley, horseradish, salt, and pepper. Stir over low heat until cream cheese is well blended with other ingredients. Add ham, vegetables, and pasta; pour into greased shallow 1 1/2 -quart baking dish.

Combine Parmesan cheese and cracker crumbs; sprinkle over top. Dot with remaining butter or margarine.

Bake for 30 minutes or until heated through and lightly browned on top.
