Introduction

A hearty beef and vegetable soup A hearty beef and vegetable soup
Number of Servings: 20

Ingredients

    1.5 - 2 pounds ground beef
    8 cups Beef broth (or 5 bouillon cubes in 8 C water)
    1 pound carrots, chopped
    1 large onion, chopped
    1 can cream-style corn
    1 can whole kernel corn
    1 can (6 oz) tomato paste
    1 large can (28 oz) diced tomato
    3/4 cup orzo

Directions

Brown ground beef in a skillet.

Chop carrots and onions. Add beef, carrots, onion, broth, and canned vegetables in large stock pot or dutch oven.

Add orzo. Heat, then reduce and simmer.

Prepare early to let flavors mix well.

Makes about 20 1-cup servings.
