Blonde Brownies

Introduction

A non-chocolate treat for my husband who is allergic to chocolate (I know-how tragic!). They have a taste that reminds me of caramel or butterscotch with out actually being either. The texture is similar to a gooey brownie. I calculated the recipe with canola oil, but the original recipe calls for 1/2 c. margarine. I would imagine butter to be the best tasting though--with the brown sugar it would add to the caramely taste of the recipe. Ingredients

    Cream together:
    2 cups brown sugar
    2 eggs
    2 tsp. vanilla
    2 Tbsp. hot water
    1/2 cup canola oil (or butter)

    Combine is separate bowl:
    2 cups flour
    1 tsp. baking powder
    1/4 tsp. baking soda
    1 tsp. salt

    Add after wet and dry are combined:
    1 cup white chocolate chips
    (1/2 of a 12 oz. bag)
    1 cup nuts (optional--I did not calculate with recipe)

Directions

In one bowl combine sugar, eggs, vanilla and hot water, and oil of choice (if using butter it should be soft) cream together. In a separate bowl combine flour, baking powder, soda and salt. Combine dry ingredients with the wet until just blended. Add the chips and nuts.

Bake in a greased 9 x 13 inch pan at 350 degrees for 25 minutes.

Cool and cut into 30 squares (6 x 5) Taste best after completely cooled for a few hours.
