Turkey stuffed peppers

Introduction

Ingredients

    1. Turkey, Ground turkey, 93% lean, 20.8 oz 1.5 lbs
    2. Yellow or Red Peppers (bell peppers), 6 peppers
    3. Zucchini, baby, 3 medium
    4. Spinach, fresh, 1 cup
    5. Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 1 can
    6. Rice, white, short-grain, cooked, unenriched, 0.25 cup (4 tbsp)

Directions

Great recipe if you follow low fat or low carb diet.
1) Set your oven for 350 degrees
2) Prepare 5 bell peppers (red or yellow) – cut the top, wash and clean of seeds
3) Wrap bell peppers into foil and set in pre-heat oven for 20 minutes
While bell peppers are getting soft…
4) Put 1.5 lbs of lean ground turkey on the deep skillet and brown it
5) Chop 1 bell pepper; 3 baby zucchinis (or 1 big zucchini)
6) When the turkey meat is ready put 1 can of diced tomatoes (your preference on what flavor to use… garlicky or Italian)
7) Add chopped bell pepper and zucchinis
8) Cook for 15 minutes
9) Add 4 table spoons of cooked rice – optional
10) Add 1 cut of fresh spinach
Take bell peppers from the oven …
11) Stuff them with the turkey-veggie mix
12) Place bells back into the oven for 20 minutes
Serve with sour cream
