Angel's Perfect Company Biscuits

Introduction

The best recipe I have found for perfectly made biscuits! I started with the Better Homes recipe and made some minor adjustments! These are not good for you but are ok once in a great while-when you've got company!! The best recipe I have found for perfectly made biscuits! Ingredients

    4 3/4 cup all purpose flour
    4 1/2 tsp ( 1 1/2 Tablespoon) Baking Powder
    1 Tablespoon salt ( could use less )
    1/2 cup plus 2 Tablespoons Lard
    2 cups chilled buttermilk ( I made my own using nonfat milk powder- 2/3 c powder to 2 cups water plus 2 Tablespoons lemon juice but you can use vinegar too!)
    3 Tablespoons butter- melted ( you don't have to add this!!)

Directions

Preheat oven to 500'. In a BIG bowl mix dry ingredients. Drop lard into dry ingredients, cover with flour and use your hands to mix it in. It should be rubbed until the biggest pieces are about a half inch. Make a well. Add ALL buttermilk ( if you made your own measure to make sure you get no more than 2 cups!). Stir with a large spoon until it just starts to pull together. Dump out onto a LIGHTLY floured surface ( a pastry mat is awesome for this!). Knead 12 times until you have a decent ball shape- you may need to add flour to your hands BUT DO NOT ADD TO DOUGH!! Flatten with your hands evenly. Dust rolling pin with flour and roll dough out to about a half inch thickness. Cut with a 3 inch biscuit cutter or a tupperware snack cup (same thing in my house-lol) Place on nonstick cookie sheet or a cookie sheet with either nonstick spray or parchment paper on it! Do NOT roll dough again. Place odd shaped leftover dough on cookie sheet as well. They are quite pretty when done. Bake 8-12 minutes until perfectly golden brown on top. Brush with melted butter. Makes 2 dozen biscuits and equally sized leftover pieces.
