Portabella Rueben Sandwich

Love corned beef but want a lighter lunch? This just hits the spot! Love corned beef but want a lighter lunch? This just hits the spot!
Number of Servings: 1


    1 portabella mushroom (100grams)
    1 oz of corned beef, chopped up
    .5 cup of sauerkraut
    1 med whole wheat pita (54 grams, 130cal)
    2 tsp inglehoffer stone ground mustard
    1 slice Kraft fat free swiss singles cheese
    .5 cup romaine lettuce, shredded


Coat a nonstick pan with PAM spray. Saute mushroom on both sides til soft. Spread mustard on pita. Saute corned beef and drained sauerkraut. Put cheese on top of mushroom and place on one side of pita. Cover with corned beef and kraut. Sprinkle on seasonings of choice. Add lettuce. Fold in half and enjoy this juicy sandwich! (good even without the beef)
