Cheesy Cauliflower Vegetable Soup

Introduction

I made this soup to use vegetables left from a party tray we had. It was quick and easy and my family loved it! I hope your family enjoys it too. I made this soup to use vegetables left from a party tray we had. It was quick and easy and my family loved it! I hope your family enjoys it too.
Number of Servings: 8

Ingredients

    1 small head cauliflower broken into florets
    1 cup coarsely chopped broccoli florets
    8 - 10 baby carrots finely chopped
    1 large stalk celery cleaned and finely chopped
    1 cup frozen sweet corn
    1 cup fat free chicken broth
    1 cup water
    3 TBS butter
    3 TBS flour
    2 cups 1% milk
    1 cup diced cheddar or colby cheese

Directions

Combine the cauliflower, broccoli, carrots, celery and corn in a large saucepan. Add the chicken broth and water. Bring to boil. Lower heat, cover and simmer for 15 minutes. Meanwhile, in separate smaller saucepan, make cheese sauce: Melt butter and add flour, 1/2 tsp salt and 1/4 tsp pepper stirring until smooth. Slowly add milk and cook stirring until smooth, thickened and bubbly. Add cheese and stir until melted. Add cheese sauce to vegetable broth mixture. Stir to combine. Serves 8.
