Banana Protein Mini Muffin

Number of Servings: 35

Ingredients

    1 C all purpose flour
    1/2 C oat flour
    1/3 C vanilla protein powder
    2/3 C splenda blend for baking
    1 C Soy natural light milk
    1/2 C pecans (measured then chopped)
    2 tsp baking powder
    1 beaten egg
    2 mashed extra small bananas

Directions

Heat oven to 400 degrees.
Combine all ingredients into a mixing bowl and mix until well blended - will be lumpy - do not overmix.

Scoop into greased with Pam mini muffin pans - I got 35 mini muffins out of this recipe.

    I believe I cooked the mini muffins about 10 minutes - but you should keep an eye on them.

    Good luck - they were delicious and the members at my gym LOVED them (I brought them as treats!)
