Introduction

this is the result of combining leftovers and getting some healthy fats into our diet this is the result of combining leftovers and getting some healthy fats into our diet
Number of Servings: 4

Ingredients

    1 tbsp olive oil
    7.2 oz salmon, cooked
    1.5 cups black beans
    1 cup corn
    1 cup salsa
    1/2 tsp cumin

Directions

Heat oil in a skillet. Add black beans, corn and salsa. Break salmon into bite size flakes. Add to salsa mixture. Sprinkle cumin over and stir. Serving is about 3/4 cup. Serve in a tortilla of your choice since those calories are not included. Didn't have it but strongly recommend sprinkling with fresh cilantro.
