Number of Servings: 8

Ingredients

    6 eggs--beaten
    2 cups of shredded low fat cheddar cheese
    16 oz of ff cream cheese
    1/4 cup fat free half and half
    1 1/2 cups chopped zucchini
    1 1/2 cups chopped mushrooms (fresh)
    3/4 cup bell pepper
    3/4 cup chopped onion
    clove of garlic-minced
    3 Tbsp oil
    1 tsp salt
    1/4 tsp pepper
    4 slices of low calorie whole wheat bread-diced


Directions

saute the zucchini, onion, pepper and garlic in the oil until tender. Let cool quite a bit.
Mix the eggs grated cheese and cream cheese-add the salt and pepper and the sauteed veggies and bread
Spray a 9x13 pan
Bake 350 degrees for an hour until set.

Let cool --best warm.
Can put in fridge and cut into appetizer size pieces and serve cold
