Reuben Casserole

Introduction

This is a family favorite. It can be prepared and refrigerated ahead of time. This is a family favorite. It can be prepared and refrigerated ahead of time.
Number of Servings: 6

Ingredients

    1 small package sauerkraut (rinsed &drained)
    1 lb corned beef, slivered
    1-2 cups Thousand Island Dressing
    2 medium tomatoes, chopped
    1 small green pepper, chopped
    2 cups shredded swiss cheese
    2-3 cups rye bread cubes tossed with 1/4 to 1/2 cup melted butter

Directions

Layer ingredients in a 9" x 13" baking dish.

Bake 1 to 2 hours in a 300 degree oven,

Serves 6.

Save calories by cutting the dressing and butter in half or using low calorie dressing.

    I agree with XCELERASIAN. The sodium count alone is a day's allowance and not to mention the 70g in fat. Sounds delicious but how to make it healthier is the question. I think I will work on this one. - 5/30/09

    Those are really scary nutritionals!!! If I were to make this, I'd definitely use low-fat cheese, reduced-cal dressing & bread, and less butter. Maybe even load up on the veggies and cut out some of the meat. - 2/23/09
