3 oz tilapia fillet
2/3 bell pepper, green
1 Italian plum tomato
1/2 small onion
1/4 tsp garlic powder
1/4 tsp cumin
1/4 tsp hot sauce
1/2 tbsp olive oil
2 each 6-inch corn tortillas
1 tbsp low fat sour cream
Rinse and pat dry fish.
Broil fish 3-4 minutes on each side until no longer translucent.
Rinse and slice pepper, tomato and onion.
Heat a nonstick skillet to medium high heat; add olive oil and saute vegetables for 4-5 minutes until cooked, but still crispy.
Add garlic powder, cumin and hot sauce and mix well with vegetables.
Warm tortillas per package directions.
Cut fish into chunks and evenly divide among tortillas; top each evenly with vegetables and sour cream.
