Whole Wheat Bread

Introduction

This is a recipe for a 2 pound loaf of bread machine bread. We use our own soft white wheat grain flour and the loaf is soft with an even texture. Surprisingly light texture for a whole wheat bread! Number of Servings: 12

Ingredients

    1 2/3 cups water
    2 tbsp canola oil
    2 tsp salt
    1/3 cup brown sugar
    4 1/4 cups whole wheat flour
    3 tbsp nonfat dry milk
    2 heaping tsp active dry yeast
    1 tbsp wheat gluten

Directions

Add water to bread machine.
Add salt, brown sugar, dry milk, oil to water.
Add flour to top of water; do not mix in. The top of the flour should remain dry.
Put gluten and yeast at top, must be dry.
Set bread machine to whole wheat bread setting, should be at least 4 hours
Remove bread when cycles are done. Let crust dry for about 20-30 minutes and slice into 1/2-1/4 inch slices. You should be able to get 12-16 slices in a loaf.
