Introduction

My mom has been making these muffins for years, now that i'm making them i'm substituting splenda for the granulated sugar and using light miracle whip, (or mayonnaise also works just fine). They are moist and yummy. My mom has been making these muffins for years, now that i'm making them i'm substituting splenda for the granulated sugar and using light miracle whip, (or mayonnaise also works just fine). They are moist and yummy.
Number of Servings: 9

Ingredients

    1 cup all purpose flour, (can also use whole wheat if you like)
    1 tsp. baking powder
    1/2 cup light miracle whip
    1/2 cup splenda
    1 medium ripe banana mashed with a fork

Directions

Very simple...mash your banana in a medium sized bowl, throw in the other 4 ingredients, blend with the same fork you just mashed the banana with just until all moistened. Spoon into 9 paper lined muffin cups.
Bake at 350 degrees for about 25 minutes or until they feel set in the middle when you give them a tap. TaDah!! Done!! Makes 9 muffins (1 serving each)
