Slow Cooker Asado de Puerco

Introduction

Number of Servings: 6

Ingredients

    2 1/4 lb pork ribs, roast or butt cut in to 1 inch cubes
    1/2 cup water

    5 pasillo chiles
    4 ancho or new mexico chiles
    4 cloves garlic
    1 cup sliced onions
    1/2 tbsp comino (cumin)
    1 tbsp oregano
    1 tbsp thyme
    1 cinnamon stick
    2 tbsp cider vinegar
    2 cups water or chicken/vegetable stock
    s+p to taste

Directions

1. Cover pork cubes with about 1/2 cup of water and simmer. Once water evaporates let the cubes bown a little in its own fat. Meanwhile, place chiles in a bowl, cover with water and let soak.

2. Once pork is done transfer to slow cooker casserole.

3. Blend chiles, 2 cups of water or chicken/vegetable stock, garlic, onion, oregano, comino/cumin, thyme, cinnamon stick and cider vinegar in a blender. Add s+p to taste. Whole peppercorns would also be great to add to the blender mixture.

4. Add sauce to slow cooker. Cook on low for 6 - 8 hours.

Note: Spanish rice or mashed potatoes are a good accompaniment because of the sauce. Also, if you like the sauce thicker you can thicken with flour or cornstarch.
