Stuff Me Peppers

Ingredients

2 green bell peppers, split lengthwise, stem, seeds & ribs removed
1 lb. ground beef
1/4 cup chopped onion
1 clove garlic, minced
1/2 cup tomato, chopped
Pepper to taste
6 oz. cheddar cheese, divided
1/2 tsp. chili powder
1/2 tsp. dried oregano
1/2 tsp. whole cumin seeds
Directions
Drop whole peppers into a large pot of boiling water. Blanch for 3 minutes, then remove and let cool. Prepare the peppers for stuffing (remove seeds, ribs, stems)
Meanwhile, brown ground beef with garlic, onion and seasonings. Drain the fat. Stir in tomatoes. Remove from heat and stir in 4 oz. of cheese.\
Place the halved peppers in a greased baking dish. Stuff the peppers with the meat mixture. Top with the rest of the cheese. Bake for 20 - 25 minutes at 350 degrees.
