Mashed Potatoes for Everyday

Made with skim milk and butter. Made with skim milk and butter.
Number of Servings: 8

Ingredients

    8 medium russet potatoes
    4 tbsp salted butter
    1 cup skim milk

Directions

Peal, wash and dice the potatoes. Place in large pan with water bring to a full boil and boil for approximately 30 minutes until potatoes are tender and fall off the fork. Drain in colander and return potatoes to the pot. Mash with 4 tbsp of butter and half a cup of milk until smooth. Add the rest of the milk as needed a little at a time until they are smooth and creamy.


Yields approximately 8 one cup servings.

    love simplicity of your recipe! 4 stars just for that.
    I adjusted it a bit to use what I had on hand:
    8 red potatoes - a little creamier than russets so needed less milk
    1/2 c. 2% milk
    2 T Smart Balance 50/50
    finished w/ 5 cloves minced garlic & 1 sprig rosemary + salt & pepper to taste
