Fresh Blueberry Banana Bread

Introduction

I got this from the Doughmakers' cookbook; however, I lightened it up by using applesauce instead of margarine, Splenda instead of sugar, and two egg whites in the place of one egg. Ingredients

    1 cup fresh blueberries
    1 cup whole wheat flour and 3/4 cup bread flour
    2 tsp baking powder
    1/4 tsp baking soda
    1/2 tsp salt
    1/3 cup unsweetened applesauce
    2/3 cup Splenda
    2 egg whites and 1 egg
    1 cup mashed ripened banana

Directions

Toss blueberries with 2 tbsp flour. In a large bowl, sift together the rest of the flour, the baking powder and soda and the salt. Set aside. In another bowl, mix the applesauce and Splenda. Beat in the eggs, one at a time. Alternately add the flour mixture and the banana mixture until blended. Stir in blueberries. Bake in an 8 1/2 x 4 1/2 inch loaf pan for 50 to 60 minutes, or until a toothpick comes clean when inserted.
