Introduction

This is an easy side that would be excellent with paoched fish. This is an easy side that would be excellent with paoched fish.
Number of Servings: 4

Ingredients

    1 Tbsp oil
    1 medium onion, sliced
    8 oz sliced white mushrooms
    1 tsp pureed garlic
    2 cups baby spinach
    1 28 oz can diced tomatoes
    1 Tbsp worcesterchire
    1 Tbsp balsamic vinegar
    salt and pepper to taste
    any herbs you like

Directions

Saute onion in oil until it starts to soften. Add mushrooms and cook until soft. Add canned tomatoes and seasonings and heat through. Add spinach and stir in until wilted.

Makes 4 x 1 cup servings
