Pumpkin Pudding Pie

Introduction

Ingredients

    2 4-serving packages Jello Fat Free Sugar Free Vanilla Pudding
    2.5 cups 1% milk, divided
    1 tsp ground cinnamon
    1/2 tsp ground ginger
    1/4 tsp ground cloves
    1 15 oz can pumpkin (not pie filling)
    5 sheets cinnamon graham crackers

Directions

Lay graham crackers in the bottom of a 8x8 square pan. Mix 1.5 cups of milk with one of the packages of pudding and spices. Add the can of pumpkin and mix well. Pour mixture over graham crackers and spread evenly. Mix the remaining cup of milk with the other package of pudding and immediately pour over the pumpkin layer. Let refrigerate for at least 2 hours. Serve with light whipped topping, if desired.
