Introduction

Ingredients

    1 tbsp margarine
    3/4 cup chopped onions
    1 tsp crushed garlic
    3/4 cup diced sweet green peppers
    3/4 c sliced mushrooms
    2 tsp all purpose flour
    1 c milk
    2 tbsp tomato paste
    1 1/4 c dried basil...or 2 tbsp fresh
    1 lb scallops sliced in half if large
    1 tbsp grated parmesan cheese

Directions

In large non stitck skillet, melt butter; saute onions, garlic, green pepper and mushrooms until softened, approx 5 min. Stir in flour and cook 1 min, stirring.

Add milk, tomato paste, and basil; cook, stirring continuously, untik thickened, 2 to 3 min.

Add scallops; cook just until opaque, 2-3 min. lace on serving dish; sprinkle w/ parmesan cheese.
