Ingredients

    1 1/2 TBS. flax seeds, ground
    3/4 cup spelt flour
    3/4 cup white flour
    1/3 cup sugar
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 tsp. cinnamon
    1 large egg, beaten
    3 TBS. extra virgin olive oil
    1/2 cup soy milk
    1 medium apple, peeled and chopped
    1/3 cup walnuts, chopped (optional, but included in this calorie count.)

Directions

Makes 24 MINI muffins. I like the mini muffins because sometimes three little ones are perfect instead of one and a half big ones.

Blend dry ingredients together in a bowl. In a separate bowl, combine egg, oil, and milk. Add dry ingredients and stir until just blended. Fold in apples and walnuts. Batter will be thick. Fill greased mini muffin pans to top. Bake for 13-15 minutes. Enjoy.
