Introduction

You can use pork or chicken in this gumbo....cooked or uncooked. This is good to put in the crockpot in the morning and you'll have a tasty meal by supper. Ingredients

    8 cups chicken broth
    1 can diced tomatoes
    1/2 can Rotel tomatoes
    1 cup each: chopped onion, celery, bell pepper
    3 garlic cloves
    1 lb. leftover pork loin (I used cooked meat, but I've also used raw chicken and let it cook all day)
    part way through the cooking time, add 1 cup raw brown rice
    bay leaf
    2t onion powder
    2t garlic powder
    1t salt
    1/2 t black pepper and cayenne pepper

Directions

Put all ingredients into a crockpot and cook on LOW all day.
