Pork Fried Rice

Introduction

Use leftover rice or pre-cook the rice and allow to cool. I also tend to use left over pork or pre-cook the pork before making the fried rice, allowing it to cool. Ingredients

    1 Cup White Rice
    1 Cup Diced Pork (small pieces, fat removed)
    1 Cup frozen Mixed Vegetables
    1/4 Cup Diced Onion
    2 Eggs
    2 tbsp Lite Soy Sauce
    2 tbsp Canola Oil (separted)

Directions

1.) Heat 1tbsp of oil and add onions. Cook about 3minutes and add the rice. Stirring frequently for about 5 minutes.

2.) Push rice against the sides and add the other tbsp of oil and add the mixed vegetables and diced pork to center of pot. After a minute or so start mixing it with the rice. Stir frequently for about 5 minutes.

3.) Once again push the rice to sides and scramble the eggs. When done mix with the rice and add the soy sauce. Mix well.
