Introduction

A healthier pesto, lemon juice and goat cheese do away with some of the olive oil and almonds are a healthier substitution for pine nuts... the spinach instead of basil makes it milder all around. I like to put this on whole wheat pasta, or mix with balsamic or lemon juice for an awesome salad dressing. Not Super healthy... but it certainly won't kill you... and a little goes a long way. Ingredients



    * Parmesan Cheese, grated, 0.25 cup
    * Goat Cheese, Soft, 2 oz
    * Salt, 1 dash
    * Olive Oil, 0.25 cup
    * Lemon Juice, 1 lemon yields
    * Garlic, 2 cloves
    * Spinach, fresh, 2 cup
    * Almonds, 0.50 cup, whole

Directions

combine all ingredients in a blender. Blend until smooth.
a serving size is a shy table spoon. throw it into your pasta while it's hot and presto... pesto!

    Absolutely! I also like to spread it on toasted whole wheat bread and top with fresh tomatos for a healthy take on garlic bread (no butter in this one) or bruschetta! I freeze it in an ice tray and then pop it out and put it in a ziplock.Gives me single serving cubes anytime!
