1 can (15 ounces) chickpeas, rinsed and drained
1/2 small red onion, quartered and thinly sliced
1/2 cucumber, peeled, seeded, and chopped
1 roasted red pepper, chopped
3 plum tomatoes, chopped
2 tablespoons chopped parsley
2 cloves garlic, chopped
3 tablespoons lemon juice
2 teaspoons extra-virgin olive oil
1/4 teaspoon salt
1/4 cup feta cheese
Roast red peppers. Chop all ingredients while peppers are roasting. Toss all ingredients together and season to taste. Salt, pepper and garlic powder are a good start! You may want to skip the olive oil and lemon juice and just use a favorite Italian dressing.
