Cocoa Banana Oat muffins

I added ground flax to try to give them a little more lift, and replaced refined sugar with date sugar. I also replaced applesauce with pumpkin, because that is what I had and the bananas and date sugar seemed to add plenty of sweetness.

Number of Servings: 12

Ingredients

    3 bananas
    1/2 cup unsweetened almond milk
    1/4 cup pumpkin
    2 teaspoons vanilla extract
    1/2 cup date sugar
    2 tbsp ground golden flax seed
    1.5 cups of oats
    3 tablespoons cocoa powder
    dash of salt
    1 teaspoon baking powder

Directions

1. Preheat the oven to 400F.
2. Mash the bananas and mix them with the milk, pumpkin, vanilla, and sugar.
3. Mix together the oats, cocoa, flax, baking powder, and salt - now add this to the banana mixture.
4. Spray your muffin tins with non-stick cooking spray and spoon in the batter. Bake for about 20-25 minutes. These are very banana-y so they will still be a little soft.
5. Makes 12 small-medium sized muffins.
