Creamy Yummy Potatoes

Submitted by: SUNNYSWEETY

Introduction

A casserole classic made with low-fat /low-claorie ingredients. They are called funeral potatoes where I live because they are often made for funeral dinners. Ingredients

*1 26 oz Bag Frozen Hashbrowns
*1 Can Campbell's Healthy Request Cream of Chicken Soup
    *16 oz Light Sour Cream
*1/4 - 1/2 C. Chopped Onion (some recipes call for green onions as well)
    Salt & Pepper
    2 C. Low-Fat Cheddar Cheese
    2 C. Corn Flakes

Directions

Preheat oven to 350 degrees. Mix soup and sour cream together in a bowl. In a casserole dish or 12" x 9" cake pan, mix hashbrowns, 1 1/2 C. cheese, onions/green onions, salt and pepper as desired, and sour cream/soup mix together. Spread the mixture evenly in the pan. Crush corn flakes--I like to place the corn flakes in a sandwich baggie and crush them with a rolling pin. Sprinkle crushed corn flakes on top of hashbrown mix. Sprinkle remaining 1/2 C. cheese over corn flakes. Cover with aluminum foil and bake at 350 for 45 minutes.

Sounds delicious but the name kinda freaks me out! just a little morbid. I will call them just plain "mormon potatoes" if you don't mind! Can't wait to try them out! - 2/9/09

  • Made this a lot for our lodge meetings. I use French Fried Onions instead of the corn flakes but that's not for dieters! - 12/9/08

  • This was good, I only used half the sour cream, (could've been less) added a second can of cream of chicken and added some cooked chicken too. - 10/14/08

  • This is an old standby for us. I like to add small pieces of cooked bacon to it. I tried it with ham, but found it to be too salty for our taste. Adding the meat makes it into a main course, instead of a side dish, so just serve it with salad or cooked vegetables and you have your yummy meal! - 10/10/08

  • The calories are wrong - I doubt there is only one serving of hash browns in it all - 6/22/08

The hashbrowns used in the recipe are all natural so they don't have a lot of calories in them. But, for a larger serving there is likley more. I edited the recipe and made it 2 servings for the hashbrowns. Thanks for your comment!

  • I added pork chops laid on top of the potatoes and stirred in a can of green beans for an easy, one pan dish. We liked it and it reheated very well. - 6/21/08

  • My sister makes something like this for all of our family get togethers. She uses crushed Wheaties cereal on hers and so we call it the athletic potatoes. We all love it. I'll definitely be trying this one. Thanks for sharing!! - 6/20/08
