Gluten Free Corn Bread

Ingredients

    * 2 tablespoon butter
    * 1/2 cup corn meal
    * 1/4 cup Pamala's GF Baking Flour
    * 1/4 cup Almond Meal
    * 1/4 teaspoon salt
    * 2 tablespoons maple syrup
    * 1/2 teaspoon baking soda
    * 1 egg
    * 1/2 cup milk

Directions

Preheat oven to 350°F. Place the butter in a 9x9 square baking pan or in a small cast iron skillet. Put the pan in the preheating oven until butter is melted. Remove from oven and tilt the pan back and forth to coat. Set aside.

Mix corn meal, flours, salt, and baking soda together. Add the egg, milk,and maple syrup. Combine with a few strokes, not overbeating. Pour into prepared pan and bake for 20 minutes.

  • I want to make this but the directions are unclear. Do we add the wet stuff together with each other first then add in the dry. It says to melt butter in the pan but then says to mix in with butter. Is there more butter? The ingredients are different than in the directions too. Help! - 6/5/08
