High Fiber Oatmeal Cookie

Introduction

Here is a healthy cookie I use as a meal replacement. All the fats are from healthy sources and there is no added sugar. They are high in fiber, so eat with a large glass of water and you will feel full. These are large cookies at about 4 inchs in diameter and 1/2 inch thick. I shape them like hamburger patties. Ingredients

    Dry Ingredients:
    1 Cup Coconut Flour
    1 Cup Oat Bran
    1 Cup Rolled Oats
    1 Cup Flax Meal
    1 tsp Baking Powder (aluminum free)
    1 tsp Baking Soda
    1/4 tsp Ground Cinnamon
    1/4 tsp Ground Nutmeg

    Wet Ingredients:
    1 cup Apple Sauce (no sugar added)
    1 1/2 cups Water
    2 Large Egg Whites
    2 tsp Vanilla extract
    1 tsp liquid Stevia

Directions

Sift coconut flour, baking powder, and baking soda into large mixing bowl. Add remaining dry ingredients and mix thoroughly with large spoon. Add wet ingredients and mix again.

With a large spoon, take a scoop about the size of a large plum and drop onto a lightly sprayed cookie sheet. Shape cookies with the spoon into large patties. 4 inch x 1/2 inch. (or use a hamburger mold for consistent size)

Bake at 375 for 15 minutes

Makes about 13 cookies
