Ingredients

2 lbs. sausage cooked and browned
8 cup water
28 oz. canned diced tomatoes w/ liquid
1 lg. onion pureed
1 cup chopped celery
4 garlic cloves mutilated
3 sm/med potatoes cubed
3 carrots
1 tbs basil
3 tbs parsley
2 tbs brown sugar
3 tbs Worcestershire sauce
1 cup uncooked pasta (anything leftover will do, pick your favorite)
Parmesan cheese
Directions
Before starting the soup, cook the sausage and cube the potatoes to cut down prep time.
1. Combine all ingredients (except pasta)
2. Cook/simmer 2 hours, stirring occasionally
3. 30 min before serving add pasta
4. Top with Parmesan cheese when served
** Potatoes take the longest to cook so put them in right away!
All ingredients are optional! Though if you omit all ingredients it wont be very substantial and hardly a hardy soup.
Try adding peppers or mushrooms too!
Dinner for 5 with seconds!

I had to try this if for no other reason than to "mutilate" some garlic! :) I used Turkey Sausage and added some cajun seasoning and cumin - other than that, I followed it to the T. Finished pot made 20 cups, so when I redid receipe, it was 10 servs of 2c each - 253cal per serving. Very good! - 10/12/11
