Chicken & Veggie Stir fry!

Introduction

I usually just throw in whatever veggies I have in avaliable with a little soya sauce and whatever spices I have.. throw it on top of some brown rice and voila! Number of Servings: 2

Ingredients

    1 chicken breast
    1 cup of chopped broccoli
    .5 cup bell pepper strips
    2 handfuls of spinach
    about 10 baby carrots cut lengthwise
    .5 cup onions chopped in large chunks
    4 slices of tomato chopped into larger chunks as well
    2 packets of soya sauce

Directions

I brown chicken with a little bit of the soya sauce and then throw in the carrots and a little water to kinda steam them. I like my veggies to be softer so I usually add the broccoli, peppers and onions not too long after. Once everything is close to being done, I add the spinach and the tomato and let it cook for about 4 or 5 minutes or until the spinach is wilted and the tomato is warm. Serve ontop of brown rice (not included in nurtitional information)
