3 large chicken breast, cubed 1 large onion, chopped into 1 inch squares 1 red bell pepper, chopped into 1 inch squares 1 tbsp olive oil 1 cup sweet and sour sauce (I prefer LeeKumKee)
Heat dutch oven to medium high, add olive oil and just enough chicken pieces to make one layer. Brown them on all sides and remove to a plate lined with paper towels. Repeat with all the chicken. Add vegetables and stir-fry for just a minute or two. Reduce heat to low, add sweet and sour sauce and chicken back to the pot. Cover and simmer about 10 minutes. Serve with fried rice. Serves about 6
