Introduction

Quick and easy breakfast that is low cal and full of leafy, dark spinach! Cooked in muffin tin so they are easy for portion control. Quick and easy breakfast that is low cal and full of leafy, dark spinach! Cooked in muffin tin so they are easy for portion control.
Number of Servings: 4

Ingredients

    1 10oz. package of frozen spinach, thawed and well drained
    1 cup cottage cheese
    1/2 cup grated Parmesan cheese
    4 eggs
    1/4 cup Milk
    1 teaspoon ground cumin
    1/4 teaspoon pepper
    2 tablespoons parsley

Directions

Combine spinach, cottage cheese and Parmesan together in bowl.
In another bowl, stir together the egs, mlk, cumin, pepper and parsley.
Combine two bowls and spoon into a lightly greased 12 count muffin tin.
Bake uncovered at 375 degrees for about 20-30 minutes. Let stand for 5 minutes.
