Turkey chili, 8-9 quarts

Introduction

Adapted from Cook's Illustrated to be lower in fat and to serve a crowd or provide enough to freeze for future use. I freeze this in quart-size freezer bags. Ingredients

    --2 Tbsp. canola oil
    --6 chopped yellow onions
    --3 chopped red bell peppers
    --3/4 cup chili powder
    --1/4 cup ground cumin
    --1 heaping Tbsp. Mexican ground oregano
    --2 Tbsp. ground coriander
    --2-3 dried chilis de Arbol, toasted or not, broken/cut into 1/4 inch pieces
    --2-3 chipotles, "
    --5 pounds 93% fat-free ground turkey
    --7 14-oz. cans red kidney beans
    --168 oz. of canned diced and crushed tomatoes (half and half or any other combination)
    --6 cups chicken broth
    --1-3 tsp. salt (depending on whether the broth was salted)

Directions

In a 12 + quart pot, heat the oil on medium-low heat and sautee the onions, red bell peppers, spices, stirring occasionally until onion begins to brown, about 10 minutes. Turn the heat to medium high, add half the turkey, breaking it up, and cook until it's browned, stirring occasionally. Add the tomatoes, beans, broth, and salt. Bring to a boil, stirring frequently, then simmer uncovered for 45 minutes, stirring occasionally. Pinch off teaspoon-size pieces of the remaining turkey and add to chili. Simmer another 30+ minutes, stirring occasionally, until turkey is tender and chili is somewhat thickened. Adjust seasoning.

Makes 8-9 quarts, or about 26 1-cup servings.
