Morton & Bassett Salt-free Cajun Spice Blend Pepper, red or cayenne, 2 tbsp
Lime Juice, 1/2 lime
Mushrooms, fresh, 2 medium
Scallions, raw, 1 tbsp chopped
Green Peppers, 2-3 slices, chopped
Zucchini, 2-3 slices, chopped
Summer Squash, 2-3 slices, chopped
Serrano Peppers, 0.50 pepper, chopped
Jalapeno Peppers, 0.50 pepper, chopped
Kraft Mexican Style Taco Cheese, 0.25 cup
Cilantro, raw, 1 tbsp
Tortilla (nutritional info from Tumaro's Low-in-Carbs Garden Vegetable tortilla, my favorite!)
2. Spread cheese across tortilla. Microwave for 30 seconds, to make tortilla flexible and begin melting cheese.
4. Add sauteed veggies, cilantro and scallions to tortilla. Fold tortilla in half.
5. Cook quesadilla over medium heat, about a minute on each side or until tortilla is golden-brown and crispy at the edges.
* I prefer this quesadilla as-is. You can garnish with sour cream, avocado, salsa, etc. Will change nutritional information.
