A simple green chili made with ground pork, canned chilis and enchilada sauce, in generous portions. Top with shredded cheddar and chopped green onions, and serve with tortillas for dipping. Ingredients

1 T canola oil
1 large onion, chopped
1 T cumin seed
1 t ground cumin
1/2 t salt
1 lb ground pork, pref organic
3 26 oz cans chopped green chilis or strips
1 14 oz can green enchilada sauce
1 cup chicken broth or stock
1 cup water
Directions
Makes 8 generous servings.
Heat oil in a large pan, and cook onions, pork and spices until the onions are soft and the pork is well-browned. Add remaining ingredients and stir well, then leave to simmer and cook down for at least 3 hours. Serve hot in bowls, topped with shredded cheddar, chopped green onions and cilantro, with tortillas for scooping and dipping.
