2 cups shredded cheddar cheese
12 oz chicken breast
2 cans enchilada sauce (or 3 cups of salsa)
2 cans refried beans, fat free
20 8-inch flour tortillas
If freezing, wrap tortillas tightly around the filling and wrap in plastic wrap or tinfoil. Freeze in a freezer bag. Cooks in a microwave very well for lunches on the go.
If eating right away, bake rolled tortillas in a baking dish at 350 for about 10-15 minutes, just enough to heat through.
