Mashed Cauliflower

Introduction

Lower carb alternative to mashed potatoes w/o much difference in taste! Lower carb alternative to mashed potatoes w/o much difference in taste!
Number of Servings: 2

Ingredients

    1 Head Cauliflower, florets only
    2 tbs light sour cream
    1/4 C fat free milk
    1 tsp smart balance spread
    salt, pepper to taste

Directions

Place cauliflower in microwave safe bowl with 1/4 to 1/2 water. Cover. Microwave for 5 minutes. Drain & put cauliflower and rest of ingredients in blender. Blend until pureed, stirring as needed to get all the cauliflower mashed. Serves 2-3. Calorie calculations are for 2.
