Sweet Potato Wheels

Introduction

Quick and easy. Get the taste of candied sweet potatoes without the calories or the time. Easy to portion too. My husband is a big eater, and I only fixed one large sweet potato and it was enough for both of us. Quick and easy. Get the taste of candied sweet potatoes without the calories or the time. Ingredients

    1 Sweet Potato (5"-6")
    6 tsp Brown Sugar
    1-2 tsp Ground Nutmeg
    3 tsp Cinnamon
    Butter Flavored Pam

Directions

Spray glass dish liberally with Butter Flavored Pam. Slice Sweet Potato into rounds that are about 3/4" thick and lay in the "buttered" dish. Add about 1-2 Tablespoons of water into the dish. Cover and microwave on high for 5 minutes. Check for doneness. If necessary, cook a couple of more minutes. When fork tender, remove cover and sprinkle the Nutmeg, Cinnamon and Brown Sugar evenly. Spray tops with the Butter Flavored Pam and pop in oven for 10 minutes or so (until the sugar starts to melt).
