Ingredients

    1 1/2 cup white flour
    1 cup whole wheat flour
    1 tsp. baking soda
    2 tsp. cream of tartar
    1/4 tsp. salt
    1/4 cup sugar
    4 oz. (400 calories worth) candied ginger, minced
    1/2 tsp. lemon rind, minced
    1/4 butter, unsalted and softened
    3/4 cup evaporated milk

Directions

Makes 40 mini scones.

Measure and mix all the dry ingredients, candied ginger and lemon rind. Cut in butter until mixture looks like crumbs. Mix in the milk. Turn dough on to floured surface and knead it just to mix all ingredients well. Using your hands, press dough to form a rectangle about an inch thick. Cut four columns and five rows. Then cut each little square in half. Place on a greased cookie sheet and bake for 10 minutes.
